Pumpkin Cupcakes

Hi there!

Today, we are making one of my most loved fall recipes… pumpkin cupcakes. They are super moist and fluffy with a creamy luscious frosting. I’m telling you, you’ve got to make these pumpkin cupcakes this fall… you won’t regret it! Enjoy!

Ingredients:

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup white sugar
  • 1/4 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla

For the icing:

  • 1 (8-ounce) package of cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon

Directions:

  1. To start, preheat oven to 350°F and either line one cupcake pan with paper liners or spray the pan with nonstick cooking spray.
  2. In a small bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
  3. In a large bowl, whisk together the pumpkin puree, vegetable oil, sugars, eggs, and vanilla until well combined.
  4. Mix in the flour mixture just until there are no lumps in the batter and it has a smooth consistency.
  5. Next, using an ice-cream scoop or a spoon, fill the cupcake slots two thirds of the way full.
  6. Bake for about 20-23 minutes or until a toothpick entered into the center of a cupcake comes out clean.
  7. Cool the cupcakes completely before icing them.
  8. To make the icing, in the bowl of a standard mixer fitted with the whisk attachment, beat together the cream cheese and butter for one minute.
  9. Add in the powdered sugar, cinnamon, and vanilla. Beat for 3- 4 minutes, starting on slow speed and then increasing to high speed.
  10. Lastly, frost the cooled cupcakes by using a piping bag fitted with a star tip or spread the frosting using a butter knife.

    1. I would recommend homemade whipped cream. You can make it by simply beating together heavy whipping cream, a spoonful sugar, and a splash of vanilla, until soft peaks form. Glad you liked the recipe!!
